I often forget to plan ahead. This can be a bit of a problem in the dinner department. Especially since my partner has celiac disease and most convenience foods are off the table. This recipe is an easy way to get a healthy dinner going quickly. Who knew you could cook salmon from frozen. Well, maybe you did but this was a revelation for me! And it turns out tender, juicy and perfect.
Digestion can be a tricky thing and it is fundamental to our health. As a result, we’ve been through many diet changes trying to pinpoint the most healing foods. This salmon recipe is quick to get in the oven and goes great with cauliflower rice, a big salad or my favorite kale and sweat potato dish (I’ll post that one day soon). Salmon is such a great food to include in your diet, it is an excellent protein source, provides beneficial vitamins and minerals and is high in omega 3’s. More on that here.
Cajun Salmon Recipe – From Frozen
- 1 whole pink or sockeye wild salmon
- 1 onion sliced
- lemon salt (or regular)
- 2 tsp Cajun seasoning (recipe 1/2 teaspoon each garlic powder and paprika; 1/4 tsp cayenne powder, onion powder, black pepper, oregano; 1/8 tsp thyme, marjoram basil).
- olive oil
Place the sliced onion on a large sheet of foil, drizzle with olive oil, sprinkle with salt and 1 tsp Cajun seasoning. You may want to use 2 layers of foil if it is thin.
Place fish on a large sheet of tinfoil, drizzle with oil, sprinkle some more salt and another teaspoon of Cajun seasoning.
Baked from frozen at 400F for about an hour. Take a look, pull a bit of the flesh with a fork, if not quite done put back in the oven for a little while longer. Honestly, it’s a very forgiving recipe.
